Fennel Cole Slaw

Fennel Cole Slaw 
"This is a great side for any BBQ using one of this season's most abundant but underused vegetables."-Corey
Makes About 3 Pounds

What You Need:
Mayonnaise, 1/2 cup
lemon zest, 1 each
lemon juice, fresh 1 each
pecans, toasted, 1/2 cup
golden raisins, 1/2 cup
fennel bulb, finely sliced (soak in lemon water), 2 lbs.
scallions, thin sliced, 3 Tbs.
basil, chopped, 1 Tbs.
mustard seed, 1 tsp.
sugar, 1/2 Tbs.



How You Make It:
1. Mix all of the ingredients together until the fennel is well coated. 
2. Serve as a side with any sandwich or with good Barbecue.
