what you need:
1 bottle J. Garrett "Debauchery" (or other age-worthy red wine)
3 shallots, chopped
1 cup dried cherries
1 lb. Butter
salt and pepper to taste
how you make it:
1. Reduce the wine, shallots, and cherries by 90% (almost dry).
2. Roughly chop the cherries.
3. Add the butter into a mixer with the cherries.
4. Beat on medium-high speed for 3 minutes.
5. Roll into cylinders in wax paper and refrigerate until solid.
6. Slice and put on your favorite steak or you can just spoon it on.
