Dessert = Fruits + Riesling + Orange / Stewed


What You Need:
Plums, halved, 4 each
Pears, halved, 4 each
Nectarines, halved, 4 each
Dates, 4 ounces
Sultana Raisins, 3 ounces
Orange Zest, from 1 orange
Colorado Star Thistle Honey, 2 ounces
Vanilla Bean, split, 1 each
Star Anise, 1 pod
Cloves, 3 each
Kosher Salt, pinch
Cinnamon Stick, 1 each
Riesling, 2 cups
Orange Juice, fresh, 1 cup
Apple Cider, 1 cup

Garnish:
Spiced Pecans, 1/2 cup
Whipped Cream, 2 cups

How You Make It:
1. In a large roasting pan, sear the fruit halves cut side down over medium heat for 20 seconds.
2. Add the raisins, dates, orange zest, vanilla bean, star anise, cloves, cinnamon, salt, and vanilla bean.
3. Cook for 2 minutes and deglaze with riesling wine.
4. Add the orange juice, cider, and honey and cook for 10 minutes.
5. Serve with whipped cream, spiced pecans and cookies.
